Fish, white meat, truffles or cheese… what is prosecco best served with?

Prosecco as an aperitif, but also during a meal

Prosecco DOC with its fine bubbles is known throughout the world as an aperitif wine, but it also forms the perfect accompaniment to all stages of a meal, from appetizers to meat or fish main dishes and even substantial salads. Its delicate yet fruity taste renders it particularly suitable for fish or white meat, but it can also be paired with more sophisticated dishes such as crustaceans or stuffed pasta.

Ever tried prosecco with oysters or cruditè? Or smoked cheeses perhaps?

A glass of Prosecco DOC is the perfect accompaniment for cruditè in general.but why not try it with oysters, clams, truffles or simple scampi or prawn dishes: this sparkling wine from Veneto, famous worldwide for its dry and delicate taste, balances the sapidity of these foods and exalts their flavour. Prosecco is also recommended to accompany savoury vegetable tarts; for example, those made with asparagus, radicchio or even onion and carrots: the slight bitterness of the former two and the sweetness of the latter two combine perfectly with prosecco, whose sapidity and aromaticity balance their taste. Even the fumè taste of lightly smoked cheeses becomes balanced when matched with a prosecco’s bubbles.

With truffle risotto or fresh summer salads

Mushrooms and truffles have decisive, clear-cut flavours which persist on the palate. The accompanying wine must be equally flavourful and persistent. Prosecco DOC is the ideal wine to enhance the characteristics of these foods and balance their distinctive tastes. In the summer, this sparkling Veneto wine is ideal for a meal that is fresh and light, just like its bubbles. What else would be such a perfect match for Niçoise, Caprese and rise salads? These dishes, with their intense Mediterranean flavours, are welled matched with the delicateness and freshness of a Prosecco from Valdobbiadene with its hints of citrus fruit and white flowers.
